“Dashi” is the extract of fish, seaweed, etc., and is the basis of almost all Japanese dishes. The taste of freshly shaved bonito flakes is very special. In this activity, participants will learn about the history of dashi and the culture of Japanese cuisine by actually making dashi and tasting dishes made with it.
出汁とは、魚や海藻などのエキスを抽出したもので、ほぼ全ての和食の基本となるものです。削りたての鰹節のおいしさは格別です。実際に出汁を取り、それを使って料理したものを試食しながら、出汁の歴史や日本料理という文化に触れる活動です。
